Whole Roasted Chicken

Ingredients

For the potatoes
  • 8 medium potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • juice of 2 lemons
  • 6 garlic cloves, pressed or chopped
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp dried oregano
  • 1 tbsp mustard
  • 1 cup water
For the chicken
  • 1 3-4lb whole chicken, giblets removed
  • 1 tbsp mustard
  • 1 tsp salt
  • 1 1/2 tsp pepper
  • 1 tbsp dried oregano
  • juice of one lemon
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375F.
  2. To a large baking dish add the potatoes and all of the potato seasonings. Toss to combine. Add 1 cup of water to the baking dish with the potatoes.
  3. Add the whole chicken on top of the potatoes. Massage the chicken all over with the chicken seasonings.
  4. Cover with foil and roast at 375F for one hour, remove the foil and roast for another 45 minutes uncovered. Allow chicken to rest for 15-20 minutes before carving and serving with potatoes.

Notes

  • Delicious served with either Simple Homemade Greek Salad or Maroulosalata aka my Mama's Salad
