Whole-Wheat Banana Bread With Greek Yogurt And Blueberries
This whole-wheat banana bread is made with Greek yogurt and blueberries for an easy, healthy breakfast!
Ingredients
- 1 3/4 cup white whole-wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt sea salt
- 1/2 cup coconut sugar
- 1/4 cup honey
- 1 teaspoon vanilla extract pure
- 1 cup banana mashed
- 2 egg
- 3/4 cup Greek yogurt plain, nonfat
- 1 cup blueberries organic
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Spray a 9x5-inch loaf pan with nonstick spray.
- Combine the flour, baking powder, salt, and sugar in a small mixing bowl. Stir thoroughly.
- Combine the honey, vanilla, banana, eggs, and Greek yogurt in a separate bowl. Stir thoroughly, then add in the dry mixture. Fold in the blueberries.
- Pour the batter into the prepared pan. Bake for 45-60 minutes, or until golden brown and a skewer inserted into the center comes out clean. Let cool in the pan before turning out onto a wire rack to cool completely.
Notes
- *Kelly's recipe says to bake 60 minutes. I baked mine 50 minutes and it was still a little brown on the outside, so watch it closely during the last minutes of baking time.Kelly's Notes:I often bake this bread the night before and serve it the following morning for breakfast or brunch. Simply let the loaf cool in the loaf pan for an hour after baking, cover it with foil, and refrigerate overnight.
