Ingredients

Whoopie Pies
  • 8 tablespoons butter room temperature, unsalted
  • 1 cup brown sugar , packed
  • 1 large egg
  • 2 cups flour
  • 1/2 cup Dutch process cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 teaspoon vanilla extract
Marshmallow Fluff Filling
  • 8 tablespoons butter at room temperature, unsalted
  • 1 cup powdered sugar
  • 2 cups marshmallow creme fluff

Instructions

  1. Preheat oven to 350 degrees and line baking pan with parchment paper.
  2. To your stand mixer add the butter and brown sugar on medium speed until light and fluffy.
  3. Beat in the egg and vanilla until combined.
  4. Sift together the flour, cocoa powder, baking soda and salt in a separate medium bowl.
  5. Alternate in the buttermilk and flour mixture 1/3 at a time until just combined.
  6. Scoop 1/4 cup measured amounts onto baking sheet 2 inches apart.
  7. Bake 12-14 minutes then let cool completely.
  8. Make the marshmallow fluff filling by beating the butter and powdered sugar together until well combined then add in the marshmallow fluff until fully combined.
  9. Add 2 tablespoons of marshmallow fluff to the flat side of half of the cookies then sandwich them together.
