Wild Rice Chicken Soup
Hearty wild rice chicken soup with vegetables is the ultimate comfort food! Whether you're feeling under the weather or simply love a classic chicken soup recipe, you'll surely enjoy this delicious meal.
Ingredients
- 1 Tbsp avocado oil
- 1 yellow onion chopped, medium-sized
- 2 carrot chopped, large
- 3 celery chopped, stalls
- ½ cup wild rice uncooked
- 4 cloves garlic minced
- 1 chicken breast chopped (10-14 oz, large
- 4 cups chicken broth
- 1 tsp oregano dried
- 1 tsp rosemary dried
- ¼ tsp black pepper
- ½ tsp salt to taste, sea salt
- 3 cups baby spinach optional.
Instructions
- Heat the avocado oil in a large pot (I use a Dutch oven) over medium heat. Add the onion and sauté for 3 minutes, until it begins to soften.
- Stir in the carrots, celery, wild rice and garlic.
- Pour the chicken broth into the pot, then cover and bring everything to a full-boil.
- Add the chopped chicken breast, oregano, rosemary, pepper, and salt. Cover and cook at a gentle boil until rice has cooked through, about 35 to 40 minutes. The slower and longer the cooking time, the more flavorful the soup will be.
- Stir in the baby spinach and continue cooking for a couple of minutes until it has fully wilted.
- Serve wild rice chicken soup in big bowls and enjoy!

- *I use chicken bone broth. Vegetable stock and beef broth work too.
