Wine Poached Pears

Red wine and mulling spices make wine poached pears a fragrant & warming dessert or special brunch dish.

Ingredients

  • 2 cups red wine such merlot
  • 1/4 cup sugar
  • 1 orange juiced (about 1/2 cup)
  • 1 1 by 3-inch strip orange zest
  • 1 cinnamon stick
  • 2 cloves
  • 4 firm ripe pears

Instructions

  1. In a saucepan that just fits the pears, combine wine, sugar, orange juice, zest, cinnamon stick and cloves. Bring to a boil, reduce heat and simmer for 5 minutes.
  2. While the liquid is simmering, peel pears carefully, leaving the stem intact. Slice 1/2-inch off the bottom of the pears to create a flat bottom.
  3. Remove the spices from the syrup, then gently place pears in poaching liquid. Simmer for 15 to 20 minutes, turning every 5 minutes to ensure even color. Pears are done when cooked and firm/tender. Remove pears from the wine if you are serving immediately or you can refrigerate them in the pan with the wine.
  4. Optionally boil wine until it is thickened and syrupy. Place a pear into a serving dish. If you’ve reduced the wine, drizzle a couple spoonfuls over each pear.
  5. Serve warm, room temperature, or chilled.

Notes

  • The pears can be a challenge to carve up as you eat them so be prepared!
