Winter Apple Salad
Winter Apple Salad combines crisp spring greens with thinly sliced Honeycrisp apples, red onion, shredded Swiss cheese, candied pecans, and bright pomegranate arils. The apple slices are tossed in lemon juice to maintain freshness and layered with other salad components before serving. This salad offers a mix of textures from tender greens, crunchy nuts, and juicy pomegranate seeds, complemented by a tangy lemon poppy seed dressing served alongside.
Ingredients
- 8 to 10 cups spring greens mix, or use baby spinach or torn butter lettuce
- 1 apple cored and thinly sliced, medium/large Honeycrisp
- 1 tablespoon lemon juice freshly squeezed
- onion thinly sliced, red, half of a medium
- 1 cup swiss cheese shredded
- 1 cup pecans candied
- ½ cup pomegranate arils
- black pepper freshly cracked
- lemon poppy seed dressing
Instructions
- In a small bowl, toss the apple slices with the lemon juice until all slices are evenly coated. Drain away excess juice.
- Place half of the fresh greens in a large salad bowl. Layer half of the apple, onion, Swish cheese, candied pecans, pomegranate arils, and some black pepper over the top. Then top with the remaining fresh greens, followed by the remaining apple, onion, cheese, pecans, and pomegranate - finish with some freshly cracked black pepper.
- Serve with lemon poppy seed dressing on the side.
Notes
- You may toss all ingredients together instead of layering for quicker preparation.
- Drizzling the dressing over the salad and tossing can evenly coat flavors before serving.
