Winter Citrus Salad with Poppy Seed Dressing
This healthy winter spinach salad recipe with citrus, avocado, pomegranate seeds and poppy seed dressing is nourishing, healthful and seasonal.
Ingredients
- 5 ounces spinach baby, washed and dried
- 5 orange mix of cara cara and blood oranges
- 1 avocado sliced
- 1/4 cup pomegranate seeds
Dressing Ingredients
- 2 tablespoons olive oil
- 1 1/2 tablespoons honey for vegan use agave, or agave nectar
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons poppy seeds
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon onion powder
Instructions
- To make dressing, combine ingredients in a small bowl and whisk until well combined.
- Assemble the salad, spinach, oranges, sliced avocado and pomegranate seeds in a serving bowl or on individual plates. Drizzle with dressing and serve. If you prefer, you can also toss the spinach with the dressing just before serving, then top with remaining ingredients.
