Ingredients
Salad
- 1 1/2 cups cooked quinoa
- 5 ounces baby kale or spinach
- 1 apple, diced
- 1 orange, peeled, segmented and diced
- 1/3 cup pomegranate seeds
- 1/4 cup sliced almonds toasted
- 2 ounces goat cheese crumbled
Champagne Vinaigrette
- 3 tablespoons champagne vinegar or white wine vinegar
- 1 1/2 tablespoons olive oil
- 1 tablespoon minced shallot
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- Kosher salt and fresh ground black pepper to taste
Instructions
- Whisk together the ingredients for vinaigrette and set aside.
- In a large serving bowl combine all of the salad ingredients and toss gently.
- Add in the vinaigrette and toss together or serve on the side.

- If you plan to eat this salad multiple days, don't add in the vinaigrette to prevent the salad from getting soggy.
