Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 cup steel cut oats
  • 1 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon lemon juice
  • 2 large eggs
  • 3 cups semi-sweet chocolate chips or chunks

  1. In a blender of food processor, grind the steel cut oats until fine
  2. Mix the flour, oats, baking powder, baking soda, and salt in a bowl
  3. Using the paddle attachment of the mixer, mix the butter and sugars on medium-high speed for 3-4 minutes until creamy. Clean the sides of the mixer with a spatula
  4. Add the vanilla and lemon juice. Continue mixing
  5. Add the eggs
  6. Lower the mixer speed and gently add the flour mixture in batches
  7. Finally, add the chocolate chips and mix until combined
  8. Place the cookie dough in a bowl, cover, and refrigerate for at least 2 hours (or overnight in the fridge) <--- don't skip this step
  9. Preheat oven to 350 degrees Fahrenheit
  10. Spoon or scoop cookie dough on a baking sheet. Cookies spread in the oven so keep them separated
  11. Bake for 9-11 minutes or until the tops are brown. DO NOT OVERBAKE
  12. Cookies will feel undercooked when taken out of the oven. Immediately place them on a cookie rack to cool. They will continue cooking as they cool.
  13. Enjoy!

  • Cookie dough can be frozen for up to 6 months
