Yakimeshi - Japanese Fried Rice 焼き飯
Yakimeshi is a Japanese fried rice featuring cooked rice mixed with mayonnaise, scrambled eggs, bacon, green shallots, salt, and black pepper. The rice is first fried in oil for texture, then combined with eggs and bacon to create a savory, creamy, and slightly smoky dish. The scallions add freshness and mild onion flavor, making it a satisfying meal or side dish.
Ingredients
- 2 cups rice cooked
- 2 tbsp mayonnaise kewpie japanese mayonnaise
- 2 lices Bacon short cut
- 2 egg
- 1/4 cup shallots green
- 1/2 tsp salt
- black pepper to taste
Instructions
- In a small bowl, mix the mayonnaise well with the cooked rice.
- Chop the green shallots and bacon into small pieces.
- Heat a little olive oil in a frying pan over high heat then add the rice and fry for a few minutes.
- Put the rice to one side of the pan and add the eggs and scramble them.
- Once the egg is half cooked, stir it into the rice.
- Add the bacon and cook for about 5 minutes.
- Add the shallots and salt and stir for a bit.
- Remove from the heat and sprinkle a bit of pepper and serve!
Notes
- Use leftover cooked rice for the best texture; freshly cooked rice can be too soft for frying.
- You can substitute bacon with ham, shrimp, salmon, or other proteins.
- Add vegetables like onion, carrots, green beans, or peas to enhance the dish.
