Yang Chow Fried Rice Recipe

Ingredients

  • 2-3 tablespoons oil
  • ½ cup carrots diced (small)
  • ½ cup green peas
  • 2 cloves garlic minced
  • 1 cup Chorizo Macao sliced
  • 250 grams small to medium shrimp shelled and deveined
  • 5 cups day-old cooked rice grains separated
  • ½ - 1 teaspoon turmeric powder
  • 3 pcs eggs beaten
  • salt and pepper to taste
  • ¼ cup green onions

Instructions

  1. Heat 1 tablespoon oil in a wok or large pan over medium-low heat. Add carrots and peas to cook until tender. Remove from wok and set aside.
  2. Add a bit more oil to the wok. Sweat the garlic just until limp and aromatic. Add the chorizo and cook for 1 minute. Add the shrimp and season with a dash of salt. cook just until it turns orange/pink. Scoop all the shrimp and chorizo out using a slotted spoon.
  3. Add more oil if needed and turn heat to high. Add the turmeric powder to the the hot oil then add the rice followed by the the beaten eggs. Quickly toss until completely coated and color becomes even.
  4. Season with salt and pepper and toss for 30 seconds to a minute.
  5. Add back the carrots, green peas, chorizo, and shrimp and half of the green onions. Toss to distribute.
  6. Transfer to a serving plate and top with more green onions before serving.
