Yellow Rice Cakes

Rice cakes are slightly crunchy on the outside, tender, flavorful rice inside and the perfect food to hold and munch away on.

Ingredients

  • 2 large eggs
  • 1 package yellow rice mix, cooked and cooled
  • 1/2 cup grated Mozzarella cheese
  • 1/4 teaspoon kosher salt
  • olive oil

Instructions

  1. In a medium mixing bowl, whisk the eggs. Add the rice, cheese, and salt and stir to combine well. 
  2. Heat 2 tablespoons olive oil in a large sauté pan. Carefully place 1/3 cup of the rice mixture into the hot oil and use a spatula to flatten into a patty. 
  3. Saute until golden brown, about 3-4 minutes on each side.
