Za'atar Bread

Ingredients

  • 1 packet active dry yeast 2 1/4 teaspoons
  • 1 tablespoon sugar
  • 3/4 cup warm water about 110°F
  • 3 cups all-purpose flour plus more for rolling dough
  • 3/4 teaspoon salt
  • 1/2 cup olive oil
  • 1/4 cup za'atar spice mix

Instructions

  1. In a bowl, dissolve yeast and sugar in warm water. Let sit until foamy, about 10 minutes.
  2. Transfer yeast mixture to a large mixing bowl, then add flour, salt, and 1/4 cup olive oil. Mix until a soft dough forms. If the dough is dry, add 1 more tablespoon of water at a time until it comes together.
  3. Knead the dough on a floured surface until smooth. Place in an oiled bowl, cover, and let rise until doubled, about 1 hour.
  4. Mix za'atar spice mix with remaining 1/4 cup olive oil to form a spreadable paste.
  5. Punch down the dough and divide into 8 pieces. Roll each piece into a circle, spread za'atar mix on top, leaving a small border.
  6. Bake in a preheated oven at 400°F for about 10-15 minutes or until golden brown.
