Za'atar Spiced Zucchini Fritters Recipe with Homemade Labneh

Ingredients

  • 2 medium zucchini grated
  • 1 small sweet yellow onion grated
  • ½ teaspoon kosher salt
  • 1 cup gluten-free flour
  • 2 teaspoons baking powder
  • 2 teaspoons za'atar
  • 1 teaspoon cumin
  • ½ teaspoon freshly cracked pepper
  • 1 ½ cup feta grated
  • 1 large egg
  • ½ cup 2% milk
  • olive oil for griddling
  • 1 cup labneh*

  1. Line a colander with cheesecloth and add the grated zucchini, onion, and kosher salt. Toss gently to combine and let drain for 10 minutes. Gather ends of the cheesecloth and squeeze as much liquid as possible from the zucchini and onion.
  2. In a large bowl, combine the gluten-free flour, baking powder, za'atar, cumin, pepper, and feta cheese. Stir gently, then add the egg and milk and stir to combine. Batter with seem dry. Add the zucchini and onion and stir until thoroughly mixed.
  3. Preheat Cuisinart 360 Griddle Cooking Center to high heat. Once hot, drizzle with olive oil. Once the olive oil is shimmering, add 2-3 tablespoons of batter and let cook for 5-10 seconds before taking a fork and spreading the batter out into a very thin patty. The thinner the patty, the crispier it will cook. Let cook for 3 minutes per side, or until golden brown and crisp, adding more oil to the griddle as needed. Cook fritters in batches until done, then serve alongside fresh labneh and enjoy!

Notes

  • *prep the fresh labneh the night before by stirring together 1 cup full-fat plain Greek yogurt with ½ teaspoon kosher salt. Add mixture to cheesecloth and let strain over a bowl in the fridge overnight, or over the sink in the morning if you're short on time (it strains faster in warmer temps). The longer it strains, the thicker the labneh will be. Spoon into a serving dish and drizzle with olive oil and sprinkle with za'atar seasoning and enjoy!
