Zesty Baked Chicken in Italian Dressing

Juicy and tender chicken marinated and cooked in Italian dressing. This easy recipe can be used as a main dish or dice the chicken in use in other recipes.

Ingredients

  • 1 1/4 pounds chicken boneless skinless breasts (3-4)
  • 1 cup Italian Dressing*
  • 1/2 lemon juiced

Instructions

  1. Prepare homemade Italian Dressing if using.
  2. Place chicken breasts in a casserole dish or Ziploc plastic bag and add 1 cup of the Italian dressing.
  3. Place in the refrigerator to marinate for a minimum of 30 minutes, but no longer than 24 hours. Turning to rotate the chicken once.
  4. Put marinated chicken breasts in a casserole dish and squeeze fresh lemon juice over the chicken. Bake at 375°F for 20-30 minutes or until the internal temperature reaches 165°F.
  5. Remove from oven and let the chicken rest for 5 minutes before slicing.

Notes

  • *Use bottled or Homemade Italian Dressing Mix recipe.
  • To make homemade dressing whisk together 2 Tablespoons of the Italian Dressing mix with 3/4 cup olive oil, 1/4 cup white wine vinegar, and 2 teaspoons lemon juice.
