Ingredients
- 12 oz. pitted green olives , unseasoned
- 20 walnut kernels
- 5 tablespoons pomegranate molasses
- ½ pomegranate , seeded
- 6 sprigs fresh cilantro , only leaves (optional)
- 4 tablespoons chuchagh (Eryngium planum, or 7 sprigs of fresh mint, only leaves)
- 4 cloves garlic , peeled
- 2 tablespoons extra virgin olive oil
Instructions
- Place the olives in a bowl.
- Wash the fresh herbs and place them in a blender, along with the pomegranate molasses, walnut kernels, garlic cloves and olive oil.
- Reserve 2 tablespoons of pomegranate seeds for garnish and add the rest to the other ingredients already in the blender.
- Mix everything together until getting a coarse paste.
- Pour the resulting paste over the olives and mix until they are all coated.
- Sprinkle with reserved pomegranate seeds.
- Serve immediately or store in the fridge until ready to serve.
