Zeytoon Parvardeh

Ingredients

  • 12 oz. pitted green olives , unseasoned
  • 20 walnut kernels
  • 5 tablespoons pomegranate molasses
  • ½ pomegranate , seeded
  • 6 sprigs fresh cilantro , only leaves (optional)
  • 4 tablespoons chuchagh (Eryngium planum, or 7 sprigs of fresh mint, only leaves)
  • 4 cloves garlic , peeled
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Place the olives in a bowl.
  2. Wash the fresh herbs and place them in a blender, along with the pomegranate molasses, walnut kernels, garlic cloves and olive oil.
  3. Reserve 2 tablespoons of pomegranate seeds for garnish and add the rest to the other ingredients already in the blender.
  4. Mix everything together until getting a coarse paste.
  5. Pour the resulting paste over the olives and mix until they are all coated.
  6. Sprinkle with reserved pomegranate seeds.
  7. Serve immediately or store in the fridge until ready to serve.
