Smaakvolle muffins van zoete aardappel en bruin teffmeel. Met tahin, sinaasappel, kokosbloesemsuiker en kokosolie.

Ingredients

  • 110 gr sweet potato puree: gekookt of gepoft
  • 75 gr teff flour
  • 30 gr coconut palm sugar
  • 3 el tahini
  • 1 el coconut oil
  • 6 el orange juice
  • 1 el orange zest
  • 2 tl baking powder without corn

Instructions

    Cup of Yum
  1. Was, rasp en pers de sinaasappel(s). Gebruik een fijne rasp en zorg ervoor dat je de witte laag eronder niet meeneemt.
  2. Verwarm de oven voor op 220 graden.
  3. Meng de teff met het bakpoeder.
  4. Prak de zoete aardappel erdoor.
  5. Voeg de tahin, kokosolie, sinaasappelsap en -rasp en kokosbloesemsuiker toe. Meng.
  6. Doe in de bakvormpjes en zet 25 minuten in de oven.
