Ingredients
- ½ cup rolled oats old fashioned
- ¾ cup almond milk unsweetened; or cashew milk
- 1 vanilla protein powder scoop
- ¼ cup zucchini grated
- ½ teaspoon cinnamon
- ¼ teaspoon vanilla
- ½ - 1 Tablespoon maple syrup optional
- 1 Tablespoon walnuts chopped
Instructions
- Combine ingredients: Place all ingredients except the walnuts in a container and stir until well combined. Seal with a lid and place in the fridge overnight (or at least a couple hours).
- Serve: Bring out of the fridge in the morning and stir. You'll notice that the oats soak up a lot of the liquid so you may want to add a little more milk before serving. Top oats with walnuts and serve cold.
Notes
- Use any type of non-dairy or dairy milk according to preference or availability.
- If protein powder is unavailable or undesired, replace it with 1-2 tablespoons of Greek yogurt for added creaminess and protein.
