Zucchini Brownies are the ultimate fudgy, gooey, brownie with sneaky veggies. The zucchini adds extra nutrition, but you'd never guess they're even there!

Ingredients

  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1/2 cup cocoa powder unsweetened
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups zucchini shredded
  • 1 cup chocolate chips divided, semi-sweet

Instructions

  1. Preheat oven to 350 degrees and spray a 9x13 inch baking pan with baking spray.
  2. In a large mixing bowl whisk together vegetable oil, sugar, and vanilla extract until smooth.
  3. Sift flour, cocoa powder, baking soda, and salt and whisk it into the mixing bowl until just combined.
  4. Stir in zucchini and 1/2 cup chocolate chips.
  5. Press mixture into a baking dish and top with remaining chocolate chips.
  6. Bake for 25-30 minutes.
