Ingredients

Zucchini Cake:
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 large egg
  • 2 1/2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 2 cups zucchini , shredded
  • 1 cup walnuts , finely chopped
Cream Cheese Frosting:
  • 8 ounces cream cheese softened
  • 1/4 cup butter unsalted, softened
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Instructions

Zucchini Cake:

  1. Preheat oven to 350 degrees and spray a 9x13 baking pan with baking spray.
  2. In a large bowl or stand mixer add the sugar, vegetable oil and eggs until well combined.
  3. Into the large bowl sift together the flour, cinnamon, salt, baking powder, baking soda, nutmeg and allspice.
  4. Whisk until just combined.
  5. Add in the zucchini and walnuts and stir until combined.
  6. Spread batter in the baking pan and bake for 35-40 minutes until a toothpick comes out clean.
Cream Cheese Frosting:
  1. Add the cream cheese, butter, sour cream and vanilla to a stand mixer and beat until light and fluffy.
  2. Add in the powdered sugar one cup at a time until smooth and incorporated.
  3. Spread over cooled cake.
