Zucchini Fritters

Easy zucchini fritters are made with only five ingredients and are served with a flavorful lemon garlic yogurt sauce. They are fried in a skillet for a crispy texture.

Ingredients

For the sauce:
  • 1/2 cup Greek yogurt
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon olive oil
  • 2 teaspoons parsley chopped
  • 1 teaspoon garlic minced
For the fritters:
  • 3 cups zucchini shredded
  • 1/2 cup all-purpose flour
  • 1/4 cup Parmesan Cheese grated
  • 2 egg beaten, large
  • 2 tablespoons extra virgin olive oil

Instructions

  1. To make the yogurt sauce, whisk together the yogurt, lemon juice, olive oil, parsley and garlic until combined. Cover and refrigerate until ready to serve.
  2. To make the fritters, place the shredded zucchini in a colander over a large bowl. Let sit for 10 minutes. Using a clean dish towel or cheesecloth, press down on the zucchini to drain any excess water.
  3. In a large bowl, mix together the shredded zucchini, flour, Parmesan cheese and eggs.
  4. Heat olive oil in a large skillet over medium high heat. Spoon tablespoons of batter for each fritter, flatten with a spatula and cook until golden brown, about 2 minutes. Flip and cook on the other side, about 2 additional minutes. Serve immediately and enjoy!

Notes

  • Storing: Store the cooked fritters in the fridge for up to 3 days in an airtight container or bag. Due to the high water content of zucchini, freezing is not recommended.

  • Reheating: You can reheat zucchini fritters by pan-frying them in a small amount of oil over medium heat. Or throw them in an air fryer at 350F for 5-6 minutes.
