Zucchini Fritters

Zucchini Fritters, also known as zucchini pancakes, are the best way to use shredded zucchini to make a delicious summer snack!

Ingredients

  • 1/4 cup flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg , lightly beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper
  • 1 1/2 pounds zucchini , grated and dried (see notes)
  • 3 tablespoons scallions , thinly sliced (optional)
  • 2 tablespoons olive oil
  • bloomin’ onion sauce , for dipping
  • Maldon sea salt , for seasoning

Instructions

  1. In a large mixing bowl or stand mixer fitted with a paddle attachment, combine flour, Parmesan cheese, egg, garlic powder, onion powder and black pepper.
  2. Mix until just combined.
  3. Add zucchini and scallions, fold in by hand until just combined.
  4. Do not overmix.Heat olive oil in a large skillet over medium-high heat.
  5. Using a tablespoon, place batter into frying pan and allow to spread and flatten. Brown on each side, approximately 1-2 minutes each.
  6. Remove and drain on a paper towel lined plate.
  7. Sprinkle with Maldon sea salt and serve with Bloomin’ onion dipping sauce.
