Zucchini Lasagna Rolls

Ingredients

  • 2 zucchini sliced lengthwise into 1/4 inch thick planks, large
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese part-skim
  • 1/4 cup Parmesan Cheese grated
  • 1 egg large
  • 1/4 cup basil chopped, fresh
  • 1 cup marinara sauce
  • 1/2 cup mozzarella cheese shredded

Instructions

  1. Preheat oven to 375°F.
  2. Brush zucchini slices with olive oil and season with salt and pepper. Grill or bake until soft and pliable, about 2 minutes per side.
  3. In a bowl, mix ricotta, Parmesan, egg, and basil until well combined.
  4. Spread 1/4 cup marinara sauce on the bottom of a baking dish.
  5. Blot excess moisture from zucchini slices. Spread a tablespoon of ricotta mixture on each slice and roll up.
  6. Place rolls seam-side down in the baking dish. Top with remaining marinara sauce and mozzarella cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
