Ingredients

For the Salad
  • 2 large zucchini spiralized
  • ½ English cucumber sliced and quartered
  • ¾ cup cherry tomatoes halved
  • ½ cup salami sliced and quartered
  • ½ cup mozzarella cheese pearls
  • ½ cup marinated artichoke hearts chopped (liquid reserved)
  • ¼ cup kalamata olives halved
  • ¼ cup Pepperoncini sliced
  • 2 tablespoons fresh parsley chopped
For the Dressing
  • ¼ cup olive oil
  • ¼ cup white wine vinegar
  • 2 tablespoons reserved artichoke hearts marinade
  • 1 clove garlic grated
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

To Make the Dressing

  1. Add the dressing ingredients into the salad dressing shaker. If you don't have a shaker, you can use a mixing bowl and a whisk.
  2. Shake until well combined and emulsified. Then set aside while you make the salad.
To Make the Salad
  1. Cut the ends off your washed and dried zucchini. Spiralize them using your spiralizer and cut them into small pieces to make it easier to eat.
  2. Add the zucchini noodles to a large mixing bowl. Add in the sliced cucumber, tomatoes, salami, pepperoncini, Kalamata olives, artichoke hearts and fresh chopped parsley.
  3. Pour the dressing over the top, then toss to combine. It's ready to serve, though it's best to chill in the fridge for at least 1 hour before serving.
