Zucchini Pizza Bites

In about 15 minutes, you can serve these easy, keto-friendly, and delicious Zucchini Pizza Bites. They are the perfect snack or appetizer topped with melty cheese, pepperoni and olives. Air fry them for the quickest time or bake them in the oven.

Ingredients

  • 1 large zucchini cut into ¼-inch slices
  • ¼ cup marinara sauce
  • ½ cup Mini pepperoni slices
  • ¼ cup black olives sliced
  • 1 cup mozzarella cheese freshly shredded
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes

Instructions

Air Fryer

  1. Start assembling the bites: Spread about a teaspoon of marinara sauce over each zucchini slice. Top with a few pepperoni slices, and a couple of black olives.
  2. Finish assembling: Place the zucchini slices in the basket of your air fryer then top them with cheese. Season with some Italian seasoning and red pepper flakes.
  3. Cook and serve: Turn your air fryer on to 400°F and cook the zucchini pizza bites for 5 minutes or until the cheese has melted. Serve immediately.
Oven
  1. Preheat the oven: Preheat the oven to 400°F, and line a baking sheet with parchment paper.
  2. Start assembling the bites: Spread about a teaspoon of marinara sauce over each zucchini slice. Top with a few pepperoni slices, and a couple of black olives.
  3. Finish assembling: Place the zucchini slices on the baking sheet and top them with cheese. Season with some Italian seasoning, and red pepper flakes.
  4. Bake and serve: Bake the zucchini pizza bites for 8 minutes and then broil them for an additional 3-4 minutes until golden brown. Serve immediately.

Notes

  • The larger zucchinis are much better for placing the ingredients on top.
  • If using medium sized zucchinis, cut them on a diagonal to create a larger surface for placing the toppings on.
  • Customize the toppings by using your favorite pizza toppings. Experimenting can be fun!
  • Include some black pepper for additional spice.
  • Zucchini pizza bites are definitely best served hot and fresh, but can be stored in the refrigerator in an airtight container for up to 2 days.
