Zucchini Pizza Casserole

Zucchini Pizza Casserole is a low-carb healthy recipe! Cheesy baked zucchini topped with a meat pizza sauce.

Ingredients

  • 4 4 cups unpeeled zucchini, shredded
  • 1/2 1/2 teaspoon salt
  • 2 2 large eggs
  • 1/2 1/2 cup grated Parmesan cheese
  • 2 2 cups shredded Mozzarella cheese
  • 1 1 cup shredded cheddar cheese
  • 1 1 lb ground beef
  • 1/2 1/2 cup chopped white onion
  • 2 2 cloves garlic, minced
  • 1 1 (15 ounce) can tomato sauce

  1. Preheat oven to 400° F. Place zucchini in colander; sprinkle with salt. Let stand 10 minutes, then squeeze out moisture as best as you can.
  2. In a large bowl, combine zucchini with eggs, Parmesan and half the mozzarella and cheddar cheeses. Press into a greased 13x9. Bake for 20 minutes.
  3. While the zucchini is cooking, in a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Add the garlic and cook for one minute. Drain. Add the tomato sauce; spoon over zucchini mixture. Sprinkle with remaining cheeses; Bake until heated through, about 10 minutes longer.
