Zucchini Sausage Casserole

Ingredients

  • 1 lb Italian sausage hot or sweet
  • 1 bulb fennel sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 zucchini sliced
  • 1 yellow summer squash sliced
  • 1 green pepper sliced
  • 1/2 cup water
  • 2 Tablespoon cider vinegar
  • 2 Tablespoon ketchup
  • 2 Tablespoon fresh basil

Instructions

  1. Heat a large saute pan over medium heat, and saute the sausage until no longer pink.
  2. Remove the sausage from the pan and set aside to drain. Pour out most of the sausage drippings.
  3. Saute the fennel, onion and garlic in the pan for 5 minutes.
  4. Add the zucchini, summer squash and pepper and cook for 5 more minutes.
  5. Return the sausage to the pan along with the water, cider vinegar and ketchup.
  6. Cover and cook for 15 minutes.
  7. Serve topped with basil.
