Zucchini Soup
This zucchini soup blends tender zucchini with a sautéed onion and garlic base, enriched with cashews and fresh herbs. The soup is cooked until the zucchini is soft, then blended until smooth, resulting in a creamy, velvety texture without cream. Lemon juice brightens the flavor, while fresh dill or other herbs add aromatic notes. It's a comforting, flavorful soup balanced between fresh vegetable taste and herbaceous lift.
Ingredients
- 2 tablespoon olive oil
- 1 onion finely chopped, small
- 2 garlic minced, cloves
- 4 zucchini skin on, ends trimmed, halved lengthwise, and sliced, medium, 1 ½ to 2 pounds
- 3 cups vegetable broth or more as desired for a thinner texture, or chicken broth
- ¼ cup cashew nuts raw
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper ground
- 2 tablespoons lemon juice fresh
- 2 tablespoons dill or basil or parsley, fresh chopped, plus more for garnish
Instructions
- Heat the oil in a large pot over medium-high heat. Add the onion and saute for 4-5 minutes, until softened. Add the garlic, and stir for another minute.
- Add the zucchini, broth, cashews, salt, and pepper, and bring to a boil. Turn the heat down to low, cover, and simmer for about 15 to 20 minutes, or until the zucchini is tender.
- Add the chopped herbs and lemon juice to the soup. Then use an immersion blender (stick blender) to blend the soup until smooth, or transfer the soup in batches to a high-powered blender, and blend for just 15-30 seconds, until smooth.
- Ladle portions of the zucchini soup into bowls and garnish with a drizzle of olive oil and fresh herbs.
Notes
- A high-powered blender creates a smoother soup texture compared to an immersion blender.
- Both immersion and high-powered blenders work well; texture preference is personal.
