Ingredients

  • 1 tbsp olive oil
  • 1 piece Italian sausage
  • 2 cloves garlic minced
  • 1/2 onion diced
  • 1 potato big
  • 2 cups chicken stock
  • Pinch salt
  • Pinch black pepper
  • pinch crushed red pepper flakes
  • prig thyme leaves removed
  • 1 cup cabbage chopped
  • 1 piece smoked sausage sliced
  • 1/2 cup coconut cream

Instructions

  1. Heat the of olive oil in a medium pot or pan over medium heat. Split open the casing of the Italian sausage and break the meat apart with a spoon. Cook until browned, then add the minced garlic and diced onion. Cook for 1 minute.
  2. Peel the potato and cut into cubes.
  3. Pour the chicken stock into the pan with the sausage and bring it to a boil over high heat. Season with salt, pepper, chili flakes, and thyme. Add the potatoes and boil them until fork-tender, around 10 to 20 minutes.
  4. Once the potatoes are tender, lower the heat and add the chopped cabbage. Slice the smoked sausage and add it to the soup. Pour in the coconut cream and let the soup simmer for 5 minutes on medium-high heat.
  5. Season the soup with salt and pepper and transfer to a bowl.
