Ingredients
Crispy Shrimp Tacos
- ½ cup coconut oil
- 1 lb Shrimp peeled & deveined, tails removed
- ¼ cup flour
- 2 eggs whisked
- ¾ cup panko breadcrumbs
- 8 small corn tortillas
- 2 avocados sliced
- ¼ cup fresh cilantro
Chipotle BBQ Sauce
- ¼ cup apple cider vinegar
- 3 tbsp tomato paste
- 3 tbsp lime juice
- 3 tbsp brown sugar
- 1 clove garlic crushed
- 1 Chipotle Pepper in Adobo Sauce
- 1 tsp adobo sauce from the can of chipotle peppers in adobo
Instructions
- Prepare the chipotle BBQ sauce by blending all of the ingredients together in a blender or food processor until smooth.
- Place the flour, whisked eggs and breadcrumbs in three separate shallow bowls.
- Dredge the shrimp in the flour, then dip in the egg, drip off any excess egg, then coat the shrimp in the breadcrumbs.
- Heat the coconut oil in a large skillet over medium high heat.
- Once the oil is hot, add the shrimp and cook for 1-2 minutes per side.
- Remove the shrimp and place on a paper towel to drain any grease.
- Place a few slices of avocado on each tortilla, top with 2-3 pieces of crispy shrimp, a drizzle of chipotle bbq sauce and fresh cilantro.
