Ingredients

  • 4 salmon filets
  • 6 tortillas wheat, corn or almond
  • ½ head cabbage
  • 2 large avocados
  • 1 large cucumber or ⅓ of English cucumber thinly sliced
  • salt, pepper
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 4 tablespoons cilantro chopped

Instructions

    Cup of Yum
  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Place salmon on a baking sheet, sprinkle with salt and pepper. Bake in the oven for 15 minutes.
  3. Meanwhile, using a mandoline or sharp knife, slice the cabbage thinly. Add cucumber, olive oil and salt to taste. Mix to combine.
  4. In a medium bowl mash the avocado and drizzle it with 2 tablespoons of lemon juice. Mix well.
  5. If you want you can toast the tortilla over a skillet or open flame.
  6. Lay the tortilla on a plate. Spread a heaping tablespoon of mashed avocado. Top with 2 tablespoons of flaked salmon and 2 tablespoons of cabbage slaw. Repeat with the other tortilla.
  7. Top with cilantro and serve immediately.

Notes

  • Don't overcook: Salmon is best when it's just cooked through. Overcooking can make it dry. For this recipe, bake the salmon in a preheated 400 F oven for about 15 minutes or until it flakes easily with a fork.
  • Making ahead of time: Preparing the slaw and avocado ahead of time can make this recipe even easier to put together. Just make sure to store the avocado with a bit of extra lemon juice to prevent it from browning.
  • Refrigerating: Simply store the flaked salmon, cabbage slaw, and mashed avocado in airtight containers in the fridge. They will stay fresh for up to 3 days.
  • Freezing: Unfortunately, I don't recommend freezing your salmon tacos. Freezing can alter the texture and flavor of the salmon and the slaw, resulting in a less enjoyable dish.
