15-Minute Salmon Tacos

This 15-minute salmon taco recipe is a fresh take on traditional tacos, swapping out the usual beef or chicken for flaky salmon. Enjoy it with some crisp and tangy cabbage slaw for the best combo!

Ingredients
- 4 salmon filets
- 6 tortillas wheat, corn or almond
- ½ head cabbage
- 2 large avocados
- 1 large cucumber or ⅓ of English cucumber thinly sliced
- salt, pepper
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 4 tablespoons cilantro chopped

Instructions
- Preheat the oven to 400 F and line a baking sheet with parchment paper.
- Place salmon on a baking sheet, sprinkle with salt and pepper. Bake in the oven for 15 minutes.
- Meanwhile, using a mandoline or sharp knife, slice the cabbage thinly. Add cucumber, olive oil and salt to taste. Mix to combine.
- In a medium bowl mash the avocado and drizzle it with 2 tablespoons of lemon juice. Mix well.
- If you want you can toast the tortilla over a skillet or open flame.
- Lay the tortilla on a plate. Spread a heaping tablespoon of mashed avocado. Top with 2 tablespoons of flaked salmon and 2 tablespoons of cabbage slaw. Repeat with the other tortilla.
- Top with cilantro and serve immediately.
Notes
- Don't overcook: Salmon is best when it's just cooked through. Overcooking can make it dry. For this recipe, bake the salmon in a preheated 400 F oven for about 15 minutes or until it flakes easily with a fork.
- Making ahead of time: Preparing the slaw and avocado ahead of time can make this recipe even easier to put together. Just make sure to store the avocado with a bit of extra lemon juice to prevent it from browning.
- Refrigerating: Simply store the flaked salmon, cabbage slaw, and mashed avocado in airtight containers in the fridge. They will stay fresh for up to 3 days.
- Freezing: Unfortunately, I don't recommend freezing your salmon tacos. Freezing can alter the texture and flavor of the salmon and the slaw, resulting in a less enjoyable dish.
