2 Ingredient Banana Bread

This 2 ingredient Banana Bread is made with ice cream and can be done in 45 minutes or less. Top it off with a decadent ganache for brunch or dessert

Ingredients

For Banana Bread
  • 1 Pint Chunky Monkey Ice Cream melted
  • 1 1/4 Cups Self Rising Flour*
For Chocolate Ganache
  • 1/2 cup dark chocolate chunks or chips
  • 1/2 cup heavy cream

Instructions

    Cup of Yum
  1. Preheat oven to 350 degrees Fahrenheit
  2. Line the loaf pan with parchment paper
  3. Grease a loaf pan with nonstick spray
  4. In a bowl place the melted ice cream. Stir with a wooden spoon
  5. Slowly add the self-rising flour until completely combined. Do not overmix
  6. Pour batter on the loaf pan
  7. Bake for 38-40 minutes or until a toothpick inserted in the middle comes out clean
  8. Remove from oven and let it rest on cooling rack for 10 minutes
  9. Remove from loaf pan and let it completely cool
  10. For ganache
  11. Place chocolate in a bowl
  12. Heat the heavy cream on the microwave
  13. When the cream boils, pour it over the chocolate
  14. Let the mixture rest for 2 minutes to allow the chocolate to melt
  15. Mix with a whisk until combined
  16. Pour over cooled bread
  17. Let it set before slicing

Notes

  • *If you don't have self-rising flour, you can replace with all purpose flour using these measurements:Per 1 cup of self-rising flour use:1 cup of all purpose flour1 1/2 teaspoons of baking powder1/2 teaspoon of salt
