2-Ingredient Date Syrup

This date syrup is a deliciously thick and silky natural sweetener. Whether you mix it into coffee, blend it into smoothies, or use it to flavor oatmeal or yogurt, it adds deep flavor and wholesome sweetness to any dish.

Ingredients

  • 1 pound Medjool dates
  • 7 cups hot water

Instructions

  1. Pit the Medjool dates and place them in a large pot. Pour hot water over the dates and let them soak for 30 minutes. Keep in mind there is no need to peel the dates.
  2. Using an immersion blender, blend the soaked dates and water until smooth. You can use a regular blender to do so as well.
  3. Place the pot over medium heat and bring the mixture to a simmer. Stir occasionally to prevent sticking to the bottom of the pot and let it cook for 1 hour and half until it darkens in color and slightly thickens. Turn the heat off and let the mixture come to room temperature.
  4. Place a nut milk bag over a large bowl and strain the date mixture in two batches to extract the liquid.
  5. Pour the strained liquid back into the pot and simmer over medium-low heat for 40 minutes or until the syrup reaches your desired consistency. Keep the pulp for further use mentioned in the notes.
  6. Let the syrup cool completely before transferring it to a sterilized glass jar. Store in the refrigerator for up to 3 months.

Notes

  • Strain for a smooth texture: Use a nut milk bag or cheesecloth to separate the liquid from the pulp. Press down firmly to extract every last drop of syrup.
  • Adjust thickness: Simmer for 40 minutes for a thinner syrup, or up to an hour for a thicker, molasses-like texture. Keep in mind that it thickens as it cools, so don’t overcook it.
  • Don't throw the pulp away: The pulp left after straining is still dates. You can use it to make date balls, add it to your smoothies or baked goods.
