Ingredients

  • 3 cups self-rising flour
  • 2 cups heavy cream

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the self-rising flour and heavy cream. Mix until a dough forms. If the dough seems too dry, add a little more cream, one tablespoon at a time, until it comes together.
  3. Turn the dough out onto a lightly floured surface. Gently knead it a few times until smooth.
  4. Pat the dough into a round shape about 1 inch thick. Using a round cutter or the rim of a glass, cut out scones and place them on the prepared baking sheet. Gather any leftover dough, gently knead it together, and cut out more scones. You should get anywhere from 9 to 10 scones.
  5. Brush the tops of the scones with a little cream for a golden finish, if desired. Bake for 20-25 minutes, or until the scones are risen and golden brown.
  6. Transfer the scones to a wire rack to cool slightly before serving.

Notes

  • Use cold heavy cream to help the dough come together better and keep the scones tender.
  • If the dough is too dry, add more cream, one tablespoon at a time.
  • Gently fold and knead the dough to create layers for flakier scones.
  • Store leftover scones in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week.
  • Freeze baked scones for up to 3 months; thaw and reheat in the oven before serving.
