Ingredients

  • 1 cup of fresh blueberries (frozen will work too)
  • 2-3 Tablespoons of maple syrup

  1. Place blueberries in a small saucepan with maple syrup. Cook on medium heat for 1 minute until blueberries just begin to soften and release juices.
  2. Mash lightly if desired and pour over waffle or pancakes of choice.

Notes

  • Blueberries are generally sweet, but there are a few sour ones. So, when picking blueberries for this dish, pay attention to the plumpness and color. The softer and darker they are, the sweeter they become. They’re sour if they’re still too firm and are redish in color.
  • Do not overcook the blueberry maple syrup, or it will acquire a bitter taste and will crystalize.
  • To make a variety of fruity maple syrups, you can combine or replace the blueberries in this recipe with raspberries, strawberries, or other fruits and berries that you like that are in season.
  • A dash of vanilla extract and lemon juice will elevate the flavors even more.
  • You can make this recipe ahead of time, and it can easily be doubled or tripled. Once you have tried it, it will make sense for you to stock up!
