20-minute shrimp stir fry

Ingredients

  • 750 g (1½lbs) Shrimp peeled and deveined
  • 3 garlic cloves thinly sliced
  • 2 cups sugar snap peas sliced
  • 2 tbsp soy sauce / tamari / coconut aminos
  • 1 tsp fish sauce
  • 2 tsp brown sugar
  • 2 tsp lime juice / rice vinegar
  • 1 red chilli sliced
  • spring onion to serve

Instructions

  1. Season the shrimp with salt and fry in a large pan set over high heat until just cooked, 1 minute per side should be perfect.
  2. Remove and set aside. In the same pan, add the garlic and sugar snap peas and cook until the garlic is fragrant. Remove from the pan.
  3. Add the soy sauce, fish sauce, sugar and lime juice or vinegar and cook for a few minutes until the sauce has reduced slightly.
  4. Add the shrimp, chillies and sugar snap peas back into the pan and stir to coat in the sauce. Allow to reheat then serve as is or with rice/noodles.
