3 Ingredient Banana Bread

Quick and easy 3 ingredient banana bread is beyond simple and so delicious! Add a 4th ingredient - chocolate chips - if you love them!

Ingredients

  • 2 bananas, overripe
  • 2 eggs
  • 1 (15.25-ounce) box yellow cake mix
  • sprinkle chocolate chips or nuts on top, optional

Instructions

  1. Preheat the oven to 325°F and grease only the bottoms of your bread pans.
  2. Mash bananas in a medium bowl.
  3. Add eggs and cake mix and mix by hand with a wooden spoon. 
  4. Divide into 2 bread loaf pans and bake for 25-30 minutes. Check the middle with a toothpick before taking them out. (You may need to extend bake times based on how hot your oven cooks.)

Notes

  • Ripe bananas. This post gives tips on How to Ripen Bananas faster.
  • Flavor variations. Use chocolate or strawberry cake mix.
  • Muffins. Divide the batter into about 24 muffin tins. Bake at 350°F for 15-20 minutes or until a toothpick inserted in the center comes out clean. 
  • Mini Loaf. Fill 4-5 mini bread loaf pans and bake at 350° for about 22-28 minutes, or until cooked throughout. 
  • Store, loosely covered, at room temperature for 2-3 days, in the fridge for up to a week, or wrap with plastic and again with foil and keep in the freezer for up to 3 months.
