3-Ingredient Strawberry Sorbet

This strawberry sorbet is easy to make and requires only 3 ingredients. It's dairy-free, low-carb, and, most of all, a delicious summer treat!

Ingredients

  • 16 ounces strawberries Fresh or Frozen 
  • 1/4 cup water as needed to loosen
  • 1-2 tablespoon honey or sweetener of choice
  • 1 tablespoon lemon juice optional if the strawberries are lacking flavor.

  1. If the strawberries are not frozen, then freeze them until they are completely solid. This should take 1-2 hours, but I usually just leave them in the freezer overnight.
  2. Place the frozen strawberries into the bowl of a food processor or heavy-duty blender. Add the lemon juice.
  3. Blend the strawberries until they are smooth, like a thick smoothie. It might take a few minutes; be patient!⠀
  4. Add little water to help with blending and scrape down the sides with a spatula, as needed.
  5. Taste the sorbet when it is smooth and then add the honey, as needed, for sweetness.
  6. Eat the sorbet immediately for a softer texture, or transfer the sorbet into a freezer-safe container and place in the freezer. Allow it to freeze for 1-2 hours or until it is firm. ⠀

Notes

  • For an extra burst of flavor, you can add a squeeze of fresh lemon juice or a teaspoon of vanilla extract to the sorbet before blending.
  • You can make this sorbet with an immersion blender if you don't have a food processor or blender. Place the frozen strawberries in a bowl and blend them until smooth, adding water and sweetener as needed.
  • The sorbet will be soft immediately after blending. You can enjoy it right away for a smoother texture, or freeze it in an airtight container for a couple of hours for a firmer sorbet.
