Ingredients

  • 1 egg
  • salt to taste
  • ¼ teaspoon red chili powder
  • ¼ teaspoon black pepper powder
  • ¼ teaspoon cumin powder
  • 2 tablespoon red onion chopped
  • 1 tablespoon tomatoes chopped
  • 1 tablespoon fresh coriander chopped
  • 2 mint leaves chopped
  • 1 small green chili chopped
  • 1-2 tablespoon ghee or cooking oil
  • 1 frozen paratha

Instructions

  1. In a bowl, combine all the ingredients except ghee and frozen paratha. Mix well to form a smooth egg mixture.
  2. Heat the ghee in a pan over medium-low heat and place the frozen paratha in the pan. Cook until the underside is golden brown.
  3. Flip the paratha and pour the prepared egg mixture on top. Use a spatula to spread the mixture evenly to the edges of the paratha.
  4. Once the other side is golden, flip the paratha again and let the egg cook on low heat for 2-3 minutes.
  5. Remove the egg paratha from the pan, cut it into quarters, and serve hot. Enjoy!

Notes

  • Feel free to adjust the spice levels by adding more or less chili powder and green chili to suit your taste.
  • You can use fresh paratha instead of frozen, but frozen paratha makes the process quicker.
  • For extra flavor, you can add a dollop of yogurt or a drizzle of green chutney on the side.
  • If you prefer a softer egg texture, cook on low heat for a bit longer to allow the egg to set gently.
