Ingredients

  • 1 cup creamy peanut butter
  • 1 cup sugar (1/2 cup granulated sugar and 1/2 cup light brown sugar)
  • 1 egg
  • 1 tsp baking soda

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a rimmed baking sheet with parchment paper.
  2. In the bowl of a stand mixer, or using an electric mixer, beat the peanut butter and sugars until well combined.
  3. Next add in the egg and baking soda and mix.
  4. Then, roll the dough into small walnut sized balls and create the classic crisscross pattern on the top with a fork.
  5. Bake in the oven for 10-12 minutes until lightly browned.
  6. Finally, serve and enjoy!

Notes

  • *There are technically 5 ingredients in the recipe, but two types of sugars. This recipe can be made with one or the other but I prefer half of each for the best overall taste.
  • You can store these 4-ingredient peanut butter cookies in an airtight container on your counter for 4-5 days. You can store them in your fridge for up to 2 weeks.
  • If you want to freeze them you can place them in an airtight container or freezer safe bag for up to 2 months.
