5 Ingredient Asian Peanut Noodles feature tender spaghetti cooked directly in flavorful chicken stock, then dressed with soy sauce, peanut butter, and a touch of sriracha for balanced salty, creamy, and spicy notes. Optional crushed peanuts and sliced green onions add texture and freshness. This sauce-coated noodle dish can be served alone or with cooked chicken for added protein.
Ingredients
- 1 pound spaghetti thin
- 6 cups chicken stock , or 6 cups water and 2 heaping tablespoons of Chicken Better Than Bouillon
- 3 tablespoon soy sauce lite
- 3 tablespoon peanut butter
- Sriracha sauce (to taste, I usually use just less than a tablespoon for a pound of pasta)
- peanuts optional, crushed
- green onion optional, sliced
- chicken optional, cooked
Instructions
- Cook the noodles on high with stock for 5-7 minutes.
- Drain off 90% of the water
- Add soy sauce, peanut butter and sriracha. Mix well.
- Add peanuts and green onions if you want to get fancy!
Notes
- Use chicken stock instead of water to cook noodles for a richer base flavor.
- Adjust the amount of sriracha sauce to control the level of spiciness.
- Add cooked chicken to make the dish more filling.
- Top with crushed peanuts and sliced green onions for added texture and freshness.
