5 Ingredient Asian Peanut Noodles

5 Ingredient Asian Peanut Noodles feature tender spaghetti cooked directly in flavorful chicken stock, then dressed with soy sauce, peanut butter, and a touch of sriracha for balanced salty, creamy, and spicy notes. Optional crushed peanuts and sliced green onions add texture and freshness. This sauce-coated noodle dish can be served alone or with cooked chicken for added protein.

Description

The dish starts by cooking thin spaghetti noodles in chicken stock, which infuses them with additional savory taste. After partially draining, the noodles retain some moisture to help sauce cling. The sauce is formed simply by combining soy sauce, creamy peanut butter, and sriracha for heat, mixing thoroughly to coat the noodles evenly.

Optional toppings like crushed peanuts and sliced green onions provide crunch and herbal brightness. Inclusion of cooked chicken pieces turns the meal into a more substantial option suitable for lunch or dinner.

This noodle dish combines straightforward ingredients for an accessible Asian-inspired meal. Cooking pasta in stock rather than water enhances flavor without extra steps. The creamy peanut sauce with spicy kick makes this recipe distinct and satisfying.

The recipe is adapted heavily from Martha Stewart’s version, focusing on minimal ingredients and quick preparation.

Ingredients

Servings
  • 1 pound spaghetti thin
  • 6 cups chicken stock , or 6 cups water and 2 heaping tablespoons of Chicken Better Than Bouillon
  • 3 tablespoon soy sauce lite
  • 3 tablespoon peanut butter
  • Sriracha sauce (to taste, I usually use just less than a tablespoon for a pound of pasta)
  • peanuts optional, crushed
  • green onion optional, sliced
  • chicken optional, cooked

Instructions

  1. Cook the noodles on high with stock for 5-7 minutes.
  2. Drain off 90% of the water
  3. Add soy sauce, peanut butter and sriracha. Mix well.
  4. Add peanuts and green onions if you want to get fancy!

Notes

  • Use chicken stock instead of water to cook noodles for a richer base flavor.
  • Adjust the amount of sriracha sauce to control the level of spiciness.
  • Add cooked chicken to make the dish more filling.
  • Top with crushed peanuts and sliced green onions for added texture and freshness.
