Ingredients

  • 3 avocados
  • ¼ cup fresh cilantro roughly chopped
  • 2 to 4 Tbsp lime juice 30 to 60 mL
  • 2 cloves garlic
  • ¼ of a jalapeno seeds removed
  • 4 cups vegetable broth chilled, 944 mL
  • salt to taste
  • To serve: croutons, diced avocado, cream

Instructions

  1. Prep: Peel and deseed the avocados, scooping the flesh into a blender. Add all remaining ingredients to the blender, adding just a pinch of salt.
  2. Blend: Blend until smooth. Taste and add salt and more lime juice as needed. Serve immediately, optionally topping with croutons, diced avocado, and a drizzle of cream (or coconut milk).

Notes

  • This soup is best served chilled, but you can slowly heat it on the stove if you prefer (though the color may become less vibrant).
  • To store, pour into a large bowl and press plastic wrap directly onto the top of the soup. Store in the fridge for 1 to 2 days.
  • Best served with our homemade croutons!
