Ingredients
- 2 cups corn thawed, frozen, fire roasted
- ¼ cup mayonnaise
- 2 teaspoons scallion white and light green parts, finely chopped (reserve tops for garnish)
- 1-2 garlic minced, cloves
- ¼ teaspoon chili powder more to taste and garnish
- ½ lime juiced, more to taste
- 2 Tablespoons cilantro finely chopped
- 2 Tablespoons cotija cheese or grated parmesan, crumbled
- salt to taste
- black pepper to taste
Instructions
- Thaw the frozen corn according to package directions, or by placing it in a bowl of water or in the microwave in 30-second intervals. Drain, if in water.
