5-Minute Vegan Lentil Salad

This vegan lentil salad uses just a few simple ingredients, and comes together in just five minutes!

Ingredients

  • 10 oz steamed lentils pre-cooked
  • 1 red bell pepper chopped
  • 1 yellow onion small, peeled and chopped
  • olive oil
  • salt
  • black pepper
  • 2 tbsp parsley chopped, fresh or freeze dried

Instructions

  1. Cook lentils according to package directions. Most take 3-5 minutes in the microwave. 
  2. Meanwhile, drizzle olive oil into frying pan and heat over medium-high heat.
  3. Add red bell pepper and onion, and cook for 3-4 minutes, until softened. 
  4. In a large bowl, mix together the cooked lentils, red bell pepper, and onion. 
  5. Drizzle with more olive oil. Add salt and pepper to taste. Mix well.
  6. Serve topped with parsley for garnish.
