Ingredients

CAESAR DRESSING
  • 3/4 cup Greek yogurt, plain
  • 1/2 cup fresh Parmesan cheese, grated
  • 1/4 cup olive oil
  • 3 Tbsp. fresh lemon juice
  • 2 tsp. anchovy paste
  • 2 tsp. Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp. Worcestershire
  • salt and pepper, to taste
MEDITERRANEAN/GREEK DRESSING
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 2 Tbsp. fresh basil, chopped (or 1 tsp. dried)
  • 1 tsp. dried oregano
  • 1/4 cup feta cheese (optional)
  • 3 Tbsp. lemon juice
  • salt and pepper, to taste
LEMON POPPYSEED DRESSING
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 Tbsp. poppyseeds
  • 3 Tbsp. apple cider vinegar
  • 1 Tbsp. honey
  • 2 tsp. Dijon mustard
  • salt and pepper, to taste
RASPBERRY VINIAGRETTE
  • 1 cup raspberries (fresh or frozen)
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 Tbsp. honey
  • 1/4 cup fresh basil leaves
  • 1 Tbsp. shallot, minced
  • 1 tsp. Dijon mustard
  • salt and pepper, to taste
HEALTHY RANCH
  • 1/2 cup buttermilk
  • 1/3 cup Greek yogurt, plain
  • 2 Tbsp. parsley, chopped
  • 2 Tbsp. chives, chopped
  • 1 Tbsp. apple cider vinegar
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
JALAPENO HONEY MUSTARD
  • 1/3 cup olive oil
  • 1/4 cup. honey
  • 1/4 cup Dijon mustard
  • 2 Tbsp. lime juice
  • 1/2 tsp. lime zest
  • 1/2 jalapeno, diced
  • 2 tsp. thyme, chopped
  • salt and pepper, to taste

Instructions

For the vinaigrette dressings:
    Cup of Yum
  1. In a medium sized bowl, whisk all ingredients together until well combined. Or you can combine all ingredients in a mason jar and give it a nice shake until combined so you don’t have to dirty a bowl! Taste and adjust ingredients as desired. Store in a mason jar or airtight container in the fridge for 1-2 weeks. Makes ~1 cup.
For the creamy dressings:
  1. In a medium sized bowl, whisk all ingredients together until well combined. Store in jar or container for up to 1 week. Or you can combine all ingredients in a mason jar and give it a nice shake until combined so you don’t have to dirty a bowl! Taste and adjust ingredients as desired. Store in a mason jar or airtight container in the fridge for up to 1 week. Makes ~1 cup.
For the raspberry vinaigrette:
  1. In a food processor or blender, process all ingredients until well blended. Taste and adjust seasonings if desired. Store in a mason jar or airtight container for 1-2 weeks. Makes ~1 cup.

Notes

  • Note: you can make any of these dressings in the food processor if you’d like a more smoother consistency.
  • Ranch: Add more yogurt and less buttermilk to the ranch dressing for a thicker consistency.
