7 Layer Dip

Ingredients

  • 1½ cups salsa
  • 16 ounces refried beans 1 can, canned
  • 2 tablespoons milk
  • 8 ounces cream cheese softened
  • ½ cup sour cream
  • 1 ounce taco seasoning 1 packet, about 2 tablespoons
  • 1 cup guacamole prepared
  • 1½ cups cheddar cheese shredded
  • ½ cup black olives or diced tomatoes
  • 4 green onions sliced
  • cilantro for garnish, optional, chopped, fresh

Instructions

  1. Place salsa in a sieve and drain the liquid into a small bowl (this keeps your dip from getting runny).
  2. In a small bowl, combine refried beans and milk (or you can use the liquid from the salsa if you prefer). Mix until smooth and spread in the bottom of a 2 qt baking dish or pan.
  3. In a bowl, mix cream cheese, sour cream and taco seasoning with a hand mixer on medium speed. Dollop the cream cheese mixture over the beans and spread evenly.
  4. Spoon guacamole over cream cheese and gently spread. Add the drained salsa and gently spread.
  5. Top with cheese, olives/tomatoes and green onions.
  6. Chill 1 hour before serving. Serve with tortilla chips or crackers.

Notes

  • This dip can be assembled up to one day ahead to enhance flavors.
  • Additional toppings like cilantro or jalapenos may be added to suit taste preferences.
  • Using a hand mixer to blend the beans and sour cream layers ensures a fluffy, scoopable texture.
  • Store leftovers tightly covered in the refrigerator for up to four days; drain off any accumulated liquid before serving.
