Aeolian Salad (Sicilian Tomato Salad)

Ingredients

  • 4 tomatoes (cut into segments or slices)
  • 6 anchovies
  • fresh basil leaves (roughly torn into pieces)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup capers
  • 10 green olives smashed
  • 1 lemon (juice of)
  • 2 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • salt & pepper

Instructions

    Cup of Yum
  1. Squeeze a little lemon juice over the sliced onions, toss around and set aside.
  2. Arrange all the ingredients on a large platter.
  3. Whisk together the remaining lemon juice, vinegar and olive oil and pour over the salad. Serve!
