Discover the flavours of Sicily with this simple summery salad. A wonderful combination of tomatoes, capers, olives and herbs. It's a fresh, flavourful and healthy addition to any dinner table.

Ingredients
- 4 tomatoes (cut into segments or slices)
- 6 anchovies
- fresh basil leaves (roughly torn into pieces)
- ¼ cup red onion (thinly sliced)
- ¼ cup capers
- 10 green olives smashed
- 1 lemon (juice of)
- 2 tbsp red wine vinegar
- 2 tbsp extra virgin olive oil
- salt & pepper
Instructions
- Squeeze a little lemon juice over the sliced onions, toss around and set aside.
- Arrange all the ingredients on a large platter.
- Whisk together the remaining lemon juice, vinegar and olive oil and pour over the salad. Serve!
